“Bernard Coste’s family have occupied this 65-hectare estate near Pézenas since the late seventeenth century, and have specialized in winemaking for more than a hundred years. Bernard himself has managed the domaine for the last twenty-five years, and has made significant investments in both the vineyards and the winery in the pursuit of high quality.
The grapes come from three seperate parcels of twenty-five year old vines, facing south and south-east. The soils are Villafranchian pebbles and chalk/clay, with volcanic subsoil.
This is a rosé de saignée – a short maceration is followed by the running off of the juice to finish the fermentation, which is temperature controlled at 15-18ºC. The three grape varieties are blended after fermentation and kept in tank until bottling in late winter or early spring.”
